On a more serious note, Optane P5800X drives are(were) not meant as a drive for OS. They’re too expensive and for that reason reserved for their special qualities. A good NAND drive beats Optane on price/performance and modern NAND drives have comparable performance as OS drives to Optane drives.
Most Threadripper Pro based workstations are build for specific workloads. There is a good chance that these workloads will benefit from fast and plentyful storage. Optane may be a good choice or enterprise NAND nvme drives for these.
Depending on the specific need a cheap SATA SSD may be a good option for a workstation.

Personally I would choose Optane since that’s what I did with mine
I am planning on using a T700 as boot drive for my next machine. I currently have a 2TB version as project-drive, and it is doing great.
