What are your GPU clocks?

I have my 6790 at 1Ghz on the core and 1300 Mhz on the memory

Mine came factory overclocked, so the Default values should be (for a non-overclocked 560 Ti):
Default Clock: 800
Default Memory: 1002
Default Shader: 1645

I don't know if crossfired cards are harder to overclock, but my 6950s blue screen if I try and overclock them past stock. Sucks.
Btw, I dont usually use that clock with crazy frequenzies, it's more like a benchmark, push-it-to-the-limit clock, that works.
Yeah I know what you mean, how much is your Vcore up from factory, or have you not touched that.
Also Green why such little OC on the memory, that's where the big performance boost comes from
I don't overclock, no games need it.

I want to overclock these cards higher than this but I need to flash the bios in order to set the voltage higher. I've tried it, but I just can't get the bios to flash for some reason.

I don't agree, Battlefield 3 with my GPU overclocked allows me to play at much higher and smoother framerates, I don't get drops at certain at points.

You also don't have a GTX 580.
I've got a very annoying problem in BF3. Two 6950s is plenty enough to play the game, but I've only got 1GB models. And for some reason, I run out of VRAM if I turn on AA. So I have to play the game with jaggies, otherwise it starts paging :(

You seem to have problems with alot of games...you ever think something might be wrong with one of you're cards? Or maybe bugged drivers or something?

I'm just very unlucky! Well at the moment it's only BF3 and Skyrim I have issues with, every other game works fine.

Try playing high-end games at 2560x1440.
And Hopkiller: Nope, I've tried, very little and close to no good performance boost at all in increasing memory instead og upping the core frequenzies, and yup higher vcore, but I don't remember at what setting right now. Im at work.
So apparently BF3 runs both my cards at 98%
