It wasn’t the custom sensor, at this point I think the issue lies with coolercontrol but I do not understand why or how
I’ve now tried installing liquidctl to see if it’s a driver issue for the commander pro hubs I’m using for my fans, I didn’t install it before since they were detected by coolercontrol but at this point it’s worth giving it a go
Seems to be working on the clean install as well as on my regular one which is currently on 18h of uptime, I’ll test it over another week or so to be sure

Apparently the instability was indeed caused by the absence of liquidctl for coolercontrol, even if it detected and applied the fan curve on the devices for some reason the absence of this driver caused the system to be unstable.
