Tried multiple CPU set-ups manually, but I cannot seem to break through the 8800 CPU MARK when benchmarking in the VM, which is very low for my 8600K.
Here is my VM set-up in Virt-Manager:
Anyone got any ideas why my CPU is not utilized?

How many cores did you leave for the host system? There could be an issue if all cores are being shared with the guest. Also I don’t think you could expect 100% performance if some cores are not being shared. 50% still seams very low though. Someone else may have better input but these are my thoughts.
How am I supposed to “leave” cores for the host?
All I can set in Virt-manager is how many CPU (which is cores I am guessing).
Does not really matter if I set 1 - 6 or as in the screenshot 5 - 6, I can only get worse performance, never get above 8800 CPU Mark total.
However on Single thread it is performing excellently, so maybe I am just reading this all wrong?
You leave one for the host by allocating 5 cores for the VM in the CPU page of virt-manger. Then the VM will use 5 cores and leave one for the host for a total of six cores.
As for performance, natively on windows it is like 16,000ish on PCU mark? If so then you should not expect more then 13,333 if you allocate 5 cores to your VM.
As for the score being under 10,000, for initial config tweaks I would recommend you take a look the the performance tuning section of this Arch wiki page-
