3/4 cup butter
1/2 cup sugar
1/2 cup dark brown sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup whole wheat flour
1/2 cup AP flour
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
2 3/4 cups rolled oats
1 3/4 cup chocolate chips
1 3/4 cup pecans

Mix it all up. Bake it for 20 minutes at 375F. Get happy.

BTW: try adding some ground cardamom. It goes well with cinnamon.

AP flour = all purpose flour

And agreed about oatmeal cookies being underrated. These cookies contain oats, and therefore they are health food. I will die on this hill.

They do contain more vitamins than just straight bread and I think marginally more fiber.

But that’s fine.

I still enjoy putting a pinch of steel-cut oats in various keto breads I make because it livens up the texture.

I should’ve gone with Ap Nut flour or something then.

If you weren’t keto I’d say get some bread flour. Makes for a different texture and spring in carb loafs.

I wouldn’t have bought the B12 line.

B12 is only achieved naturally by consuming animals.

But other than that lol not bad.

Lunch.

  • Leftover Italian dressing chicken and leftover instant potatoes.

Dinner

  • 3-egg Spam and cheese omelette, fried in Spam grease after frying Spam. I got all fancy with it and put a little garlic powder, onion powder, paprika, and red peppers in the egg mix. Almost half a can of spam and cheddar cheese slices inside. Still needs ketchup. Eggs are just so boring.
  • Buttered toast with olallieberry jam

Pumpkin Cheesecake. Cinnamon Graham cracker crust, with a sour cream glaze. Topped with butter caramel and bourbon vanilla whipped cream.
