This is a youtoob channel with the goal of preserving the cooking heritage of Italy. Its just vids of almost forgotten, and sometimes time consuming, recipes… and its fascinating. For me its the above, but also the hands. I love the hands. Hands mixing two flours on a board and you can see the years of practice and the resulting easy manipulation of ingredients. Its just blowing my mind.
