The Recipe
2 cups flour
3 tablespoons sugar
1 ½ teaspoons baking powder (you may optionally get some baking soda and add equal amounts)
1 ¼ teaspoons salt
2 ½ cups buttermilk
2 large eggs
3 tablespoons unsalted butter, melted
Splash of vanilla (subjective)
Coconut oil for the griddle
Steps so easy anymonkeyone can do it
Step 1: Turn your pancake griddle on to about 325 F
Step 2: Sift your measured flour
Step 3: Whisk flour, sugar, baking powder, baking soda and salt together in a bowl
Step 4: Using the whisk, make a crater in the center
Step 5: In a separate bowl mix/whisk the measured buttermilk, eggs and vanilla together
Step 6: Pour it and the melted butter into the crater
Step 7: Going from the center out, whisk everything together until all ingredients are mixed together. Do not overbea its supposed to be lumpy. If you need to pause. The batter maybe refrigerated for not longer than 1 hour. You want bubbles in your batter so they come out fluffy
Step 8: Using a measuring cup or ladle shoot for 1/3 cup batter into each pancake pour on the griddle. Dont over crowd that surface you want room to flip.
Step 9: Flip pancakes after bubbles rise to surface and bottoms brown, about 2 to 3 minutes. Cook until the other sides are lightly browned. Place on a plate and eat. Do not stop cooking until you have used all the batter. … Pour some syrup on it. About a tablespoon will do
