Did you change the password of the user while logged in through ssh?
Because than the password for luks did not get upgraded -> you broke it
I honestly would suggest you to start over, the SSH config isn't thaaat bad ... and maybe even use debian as a server OS. Ubuntu is ... well yeah... a Frankenstein debian.
If you reinstall do not use full disk encryption or home directory encryption.

You not gonna learn it if you don't break it - be honest, everyone that is a windows power user broke their w95/98/2000 install more than just once ;)
ima got to work and download debian and mabey fuck around with it on a VM at lunch im sure ill post something later about debian, see yall later
