Changing the install direcotory for individual programs?

Hello all. I want to make Linux my primary system on my gaming laptop. One the things I really liked about Windows is the micro managing of program installs, so long as Windows doesn't nuke itself. The reason I enjoy said micro management is because I have a multi-drive system. I'd like as little as possible on my SSD and as much as possible on my 1TB SSHD. Programs I don't used often, such as music manager, or indie games, I can have on my storage drive (I was thinking my /Home directory since I installed that on my storage drive.), and stuff I use all the time, or can't stand the load times of I can slap on my SSD. Is there any way to do this on program by program basis on Linux?

BTW, I'm using the latest Linux Mint LTS.

You can select the Mount point of the second hdd on the system you can also store the games on a second hdd and like to them with a symbolic link.
