I have everything setup to my liking so far in Arch but I can't seem to find the right documentation to be able to change the power button setting from shutdown to lock. Help!
This highly depends on what DE or WM you are using, such as i3, you can bind a program to lock your screen(XscreenLock I think). You should be able to change it in the settings of whatever DE you use if you use one.
