I was wondering if this setup would be great for Photoshop, Illustrator, Flash and gaming at 1080p.

Maybe people may say to get a higher wattage of PSU but 620 will be more then enough and has some room for expandability. :)
I don't know which one to get. I'm stuck between the ASUS Sabertooth 990FX R2.0 or the ASUS Crosshair V Formula-Z.
Well you know you need a Socket AM3+if you are going to be using a FX 6350 CPU. Asus Sabertooth 990FX like you said above is a good choice. But from what I see its more of a budget build. So you could always go for a lower priced board, may not have some of the fetures the Sabertooth has but could save money like the Gigabyte GA-970A-UD3 or Asus M5A97 R2.0 Just a bit cheaper has has most of the fetures you will need.

It's not a budget build and I thought about those but I think these are great and they are good if I expect to change the CPU in the future. I think.
Yeah, go with what you deem to be of most use to you. I would have loved to have got a Sabertooth but it was out of my buget. :(
