It doesnt cost that much more and if they want to compete with apple having more storage is a good idea. Also when they don't even have the option for a 64gb one they at least need a micro SD slot like almost all other android devices. I love my new nexus 7 but it came with only 26gb out of the advertised 32 and I already used up 6gb of it. Also I was really hoping it would have the new tegra 4 but alas I was wrong, well maybe gen 3 will have the new Logan chip.
Because Google aims to make people use streaming services. For the same reason Nexus 4 only has 8 and 16 Gb versions.
Like, there's Google Music that allows you to upload 20000 songs in any format for free and stream them anywhere. It's way more than you can have even on 64Gb.
I think the reason is what Dissentient already talked about - Streaming.
A tablet is not really meant to be a primary storage device for media, simply a consumption device. I think what most would do (or at least myself) is have their home/main computer have their video, music, pictures, have a substantial amount uploaded to a 'cloud' (google drive, skydrive, mega, etc) and then use the tablet to either download and use small amounts of your library or stream on a 'as needed' basis.
Just wait till there is one. Just like the iPad; took a damn while till there's a 64GB version of it.

You can't stream everywhere and unless you have unlimited data that can cost a fortune when you are.
Why is that always the stupid answer I hear? "Just stream...." Well guess what , if I had a 64gb or 128gb (like Apple!) I wouldn't need to stream!
And I totally disagree with your statement about not using it as a primary storage device. The whole premise of the Nexus is you put everything on it! Apple has iTunes which is a place to determine which apps and movies you want at any one time so they are readily available to add to a device from a computer. The Nexus wants you to download every crappy whatever and store it on the device.
The problem with your argument (the second half at least) is that you can pick and choose things to store on your device within Google's streaming apps.
And honestly if you don't like the storage options Google is offering on their Nexus devices I'm fairly sure you can find an Android tablet from a manufacturer who does. I get that the price of the Nexus devices is really attractive but it comes with trade-offs.
