Well, do the math.
21:9 1440p is 4.95 Millions Pixels
3x 1080p is 3x 2.07 Million Pixels (6.21M)
So surround is harder to drive from a pixels per second standpoint.
But you may also run into issue running surround because not all games will support it, and surround setups are not perfect in their current implementation.

It is the same way for 21:9, although not as bad it is still a point to consider. Many Games will only run in 16:9 which will result in black bars on either sides of the screen leaving you with 2560x1440p.
