How powerful is the Raspberry Pi 3 and is there a list of game servers than can be made on Pi 3?
i would imagine a very small minecraft or pocket minecraft server or teamspeak / mumble could be hosted on one but thats all i know for stuff that doesnt require alot of power to run it
I successfully loaded a Minecraft server on a Raspberry Pi 2, but other than that I don't think you can run much else server wise for popular games. Also I think you migh want to get a gigabit LAN adapter if you're going to run a game server on it. As far as I know you can run a Quake server and some turn based game server.
Yup can confirm Minecraft on a Pi2 ran great. Heimdalls server was running off one with 5 people on at once from all over the world and room for 20. It took just about all the crap we could throw at it including live world edits while people were on working.
It's a pain in the ass but you can do it lol

Fair enough.. I suggest running headless or if you must have an environment go ahead and run LXQT not LXDE as LXQT is phenomenaly better
