As classical pieces I would consider classical music.
So I would just give a shout-out to my two favourite composers.
Frederick Chopin and Ludovic Van Beethoven.

Also huge shout-out to all of Chopin etudes. They are remarkable pieces of piano mastery.

For sure, but I want to cast a wider net and am unsure how else to imply ‘Includes a Piano or String Instrument (That is NOT an Electric Guitar)’.

Anyway.
While it doesn’t showcase as much technical skill as a Chopin piece, I find It Breaks by Leon Vynehall to be achingly pretty.

I also have fond memories of midi versions of Bach’s Brandenburg Concerto, Fur Elise and all other free classical music non-sense during the Win95 era

I’m not a huge fan of flutter but I can’t knock the style just because it’s personally not my thing.

Also you’re right that Pope is fucking UNSETTLING.
