VM crashes host system when booting up after qemu upgrade

While trying to fix this issue of mine I apparently dug myself into a hole:

The problem is as follows:
After updating to a manually compiled & installed qemu 5.1 (up from the Standard qemu via apt 4.2-3ubuntu6.6 in Linux Mint 20) my entire system just crashes/freezes at Tianocore boot (NOT JUST THE VM, HOST AS WELL).

Maybe the passthrough/binding of the GPU does not work properly anymore and this is the problem? Nothing I tried yet seems to rectify any issue though…

I also went through some reconfiguring of my hardware since I seemed to have some issues with the PCI bus and RAM that apparently was either a bend pin or too much / little pressure on the CPU from the cooler.

As a result my passthrough graphics card is now in a different slot and has different IOMMU grouping, I thought I had adapted the relevant things though.

After updating I needed to change the machine type because for some reason “pc-q35-5.1” is deemed unsupported even though it shows up when entering

Entering q35 in the Virt-Manager XML as machine type at least let’s me attempt to boot but crashes the system as described earlier.

I am running Linux Mint 20 with kernel 5.9rc8.

Passthrough gpu to Win10 VM is supposed to be the NVIDIA GeForce GTX 980 and the host gpu is the AMD
card.

Maybe someone can give me a nudge in the right direction. I feel I am breaking more than I am fixing in the last ~2 hours.
