Two Builds, need advice

I already have a computer built, but am wondering how to max out it with my other build. My other build, being my old one from 2009/10. 

Here is the run down. Currently I am running my rig with these components.

Case: Corsair Graphite 600t

Mobo: Asus Sabertooth 990FX

CPU: AMD FX 8320

RAM: 16gb 4 * 4gb Corsair Vengance 1600

GPU: XFX AMD Radeon R9 280x

Drives: 120gb Mushkin SSD, Intel 330 240gb (used solely as gaming drive), 2TB Seagate, LG Bluray

Cooling: Corsair H80i

Sound Card: Soundblast Recon 3d

 

Build 2 (Possible, already have all the components, I just want to know what I should mismatch from both)

Case: Corsair Carbide Air 540

Mobo: ASrock MATX (shitty, not sure what it is, but supports AM3, 40 dollars or so)

CPU: Phenom II X6 1090t

RAM: 8GB Patriot 1600

GPU: EVGA GTX 580 SC

Drives: 2 x 240gb PNY Optima (possibly raId?), 2 x 1TB WD (one blue on black), 320GB WD (for games?, pulled it out of a old laptop that was being thrown away), LG DVD burner

 

I think for the most part the builds are good. I was gonna make number 2 be my htpc/audio controller. Problem is, the mobo doesn't even support 5.1. I was thinking, the sabertooth already has decent audio onboard, I would pop the recon 3d in the second build? It would allow me to hook my surround sound system up and have my tv, consoles, dvr, etc all controlled by the pc (one output source). I am thinking about making one of these into a home cloud server too. Not sure which one, plan on one being used for LAN parties. At the same time the server has to be on 24/7, which means I might use the audio controller one as that. I am not sure.

What I want out of this is:

One that controls all of my electronic audio

One that acts as a cloud/home storage pc

One for Virtualware (vBox. vmware)

Operating System can be 8.1 or 7

Both have to have good AV, I am thinking the server would be used as a firewall of sorts. Have all traffic routed through it via a second nic and then scanned with two different AV. I am thinking my primary gaming one is going to use Avast and the secondary is AVG or something. 

So one rig is going to be for gaming, word processing, everyday use. The second is just going to tie all my audio from my toys through to my speaker system. The audio one would probably be better to act as a cloud server. I plan on using this for family and friend use (the cloud). I was gonna start with 2tb, and use my external as a backup of that. Also the HTPC will probably make use of a lot of emulators/roms, as I love pokemon on my tv. I am pretty sure I know what I want, but I wish for your advice. All of the parts for these two builds are interchangeable, but I need to know which ram I should be putting in for which. I assume the 16gb should be swapped out for 8gb, because 16gb is more beneficial for the server. However I am not sure. Both have 400-600 dollar cards, 6 and 8 core cpus, both will have two ssds and a large volume of hdd space.

your graphics cards have HDMI on them, they support 5.1, just keep the optical out form your tv to your sound system. 

That was poorly detailed as I wrote this at like 2 or 3 am. Anyways, here is what I need. One computer is going to be for daily use, gaming, video ripping, and conversion and web design and school (programming). This will most likely be the Asus build. The second will be for gaming, home cloud, and audio controller. I haven't decided which yet, but the Air 540 would probably be better for the first build, as it is more portable, supports the same mobo dimensions. Problem is it has hot swappable bays, which is exactly what I am looking for in a cloud computer. At the same time I need the server to run even when I am at lan events. So the 600t would be better than the 540 for the cloud server. Problem is the 600t is far to large to be my htpc chassis. Which brings me back to my point, I am having trouble deciding what should be what? Given the listed parts, how would you assemble them to for my two primary purposes?
