My problem is the EVGA card has 3 power connectors, The Core X has 2 8 pin connectors. Can I get away with buying a splitter?
When dealing with video card power connectors, it’s best to use the cables that come with the Power Supply and nothing else. Adding third-party cables and splitters may have incompatible wiring as all PS vendors don’t follow the same wiring standards. Not to mention you are doubling the load on any given cable which may decrease the lifespan of your PS and increase the chance of damage (or even a fire) from an overheated cable.
If the PS manufacturer has a cable with two GPU power ports, then you are safe to use it; adding a second cable for the third. Personally, I’d want to have each GPU power connector go back to independent ports on the power supply to balance power draw.
When I want to determine the PS size for a build, I total up the max power usage of all components: mobo, cpu, gpu, HDD’s, expansion cards, etc. Then I double it. That wattage should be your minimum PS size as you’ll want to run your PC at 50% rating of the PS. It also gives you reserve if you ever add additional components or upgrade in the future.
That’s my opinion based on years of experience building my own systems. YMMV.
Rather than buying a splitter, it would probably be safer (relatively speaking) to buy a dual-SATA-power to 8pin PCIE power adapter cable.

Those eGPU assemblies have fixed wiring and power delivery reqs pre-baked
IIRC, it was also supporting 100W delivery, to the laptop [USBc]
Actual GPU ceiling, would be with 2x 8pin builds [2080Ti, RX6800 for a few examples]
Well I have a 3080 for sale. I’ve been watching reviews all day, pulled the trigger on a 6800 xt. Saphire plus with 2 pin connectors. I came to the same conclusion too. I would rather not ruin a perfectly capable 3080 and just “downgrade”
I’d imagine in the near future, eGPU shells would need to entertain 3x8p / 450+W support
… But they likely just fore-go the pliability, to just make a a few laptop-GPU eGPU packages
Its already a sh!t strat, since the green chips recent nomenclature(s), is [actually] soo cut/nerfed down
