Oh, looks like ESP is the same thing as EFI then? That's what I'm seeing as results. I've only seen the partition referred to as EFI so when I saw ESP I had no idea what you were talking about.
The EFI ESP Partition is a small (normally around 200MB) partition on all GPT drives that contains your OS's bootloader and other boot-related files.
I installed Clover to the USB, but when the EFI partition is mounted, it's empty. Is that normal? In your statement you said that the kext should go in sub folders.
Would it be okay to just put it there even though nothing shows up?
edit - It appears that it's not on the EFI partition, it appears to have been in the standard partition rather than the EFI partition. Is that where it should go?
Something most likely went wrong then. Clover should have created multiple folders on the EFI partition.
