I was wondering if anyone could help me plan on how beefy of a power supply I’ll need to power two Nvidia 3000/4000 series or equivalent Radeon GPUs? How should I go about calculating this? Also, any suggestions on brands?

Check reviews on a per unit basis.
The psu tier list from psucultists is pretty nice. You can either find a psu and check if its in the list or take one from the list. You can also use PCPartsPicker to calculate wattage. Just add all your components and it will give you an estimate.

Look at the warranty length, shows a lot about quality of product. OEMs such as superflower/seasonic are good options
