Really good.
Pseudo-authentic Chinese Sichuan Chicken Dish, addictingly spicy goodness:
For 4-6 portions, serve with some Jasmine rice:
Fresh ingredients:

2 large chicken breasts, pieces velveted

ca. 250 g of freshly-toasted, unsalted peanuts

2 large red bell peppers

2 long pieces of stalk celery
-
20 pieces of garlic cloves, roughly sliced

2 thumb-sized pieces of ginger, finely chopped
-
4 green onions
-
ca. 25 g of cilantro leaves
Spices:
-
ca. 50 g of dried heaven-facing Sichuan chili pepper, freshly-toasted
-
4 table spoons of red Sichuan pepper, freshly-toasted and ground
Other:
-
250 ml of Chinese Cooking Rice Wine
-
Light and dark soy sauce (8 parts : 1 part)
-
2 table spoons of rice vinegar
-
4 table spoons of honey
-
Duck fat as cooking oil
It is called Cincinnati style chili. There is a restaurant in Ohio called Skyline Chilli.
I had some extra bell peppers that I turned into roasted pepper pasta. It was good, but the sauce was a little watery. I will try again in a week or so, but I will try to dehydrate the peppers a little bit after roasting them to reduce the amount of water in the sauce.

Fried spam with mustard is delicious.
I made that lentil soup with lamb bouillon again, couldn’t be arsed to make anything else. Red lentils, lam bouillon, red bell pepper paste, lemon juice, ground cumin, and some red onions in it.The bouillon can be swapped out for vegans, but it is mighty tasty.
The trick is to cut it thin so you can get a crisp on it.
got inspired by babish hot dog video and made a hot dog chili “coney dog” with home made chili. havent been to a coney island in so many years this hit the nostalgia spot.
Zucchini patties with roasted tomatoes and some yoghurt sauce. A bit too much salt and black pepper but it was great with the yoghurt sauce and rice.
