We used to make home made pork lard. It was really good for home made cookies and frying things…
Never thought beef can really have enough to make it usable…

2:30m on each side is perfect medium rare according to Ramsey…
I don’t like the blood and red juices coming out of the meat. But if you like it - enjoy :wink:

At what temp? And at what steak thickness?

Just want a scorching hot pan. Probably about 1" for that long.

Also want to hold it on the fat side for like 30 seconds to render it properly.
