I am through 50 oysters so I am on pace to finish by Monday.

But I am burnt out on raw.

I am going to fire up the grill and char grill a bunch and then fry the rest and make poboys.

Last night I made it through about half my clams by steaming them in a white wine, garlic and butter sauce and adding them to some linguine, but I was too inebriated to take a picture.

Champorado (tablea chocolate and glutinous rice porridge)

with brown sugar and cream.

It usually is served with evaporated milk and fried dried fish. I used to like mine with powdered milk instead of evaporated milk but I recently discovered it taste nice with all purpose cream. Also I dont like the fried fish portion, most of my countrymen likes it though.

Grilled chicken that was marinated in Italian Dressing for some flavor…

Chicken as well.
Skinless boneless breasts. Olive oil, steak spice, and cajun spice.


Marinade for an hour. Then breaded with a bit of cajun in the crumbs.

I want some smoke on this chicken so…


15 minutes and a flip.

Another 20 min, then out of the pan and on the grill.

Baked some Tortellini alfredo with mozzarella for the side.

And BAM. Dinner is served.

Does the breading help with the chicken drying out too much? I find that precooking by boiling (or sous-vide) helps maintain juiciness.

I use a thermometer and take it off at 180f. Was pretty moist. But not as Juicy™ as deep frying. :drooling_face:

yes if you cook it at a high enough temp that the breading cooks into a crust very quickly. you can also marinate the chicken in various things to get it super juicy™

so had some chicken and sausagein the freezer and some of the potatoes were starting to go bad, so big meal time to use them all up first!
used chef johns recepie and added mushrooms, subbed hot italian for sweet fennel italian form my local italian place, and changed the spices a bit to add some heat to replace what is not in the sausage. also maybe slightly upped the amounts just abit.
