Point of Sale Hardware Help needed

I’m a multi unit franchisee with a large franchisor, I have no certifications or education in technology, just a passion for building and fixing things. The Franchisor is replacing some older out of date kiosks with new Elo AIOs. These things are rocking an intel 8100T, but corp is excited because of the potential for Android Dual Boot, which I cannot find any proof of existing.
I’ve priced out some Elo Touchscreens and Minisforum mini PCs that improve functionality over the existing setup (minus android dual boot) but they are pushing back on Chinese brands being a cybersecurity black hole.
I’ve been looking for about a day for industrial use type stuff and I am looking for any recommendations for brands or hardware to use. Below are my notes

  • DP Alt Mode / PD: It would be convenient to have an alternative power source for the Elo Touchscreens (I’m using a 1502L that can be powered by USB-C). This reduces the cable runs through the point of sale desk.
  • Processing Power: Our system currently has to run on windows (/sigh) so it will need to be about as performant as a N100. They are planning an android app to run our kiosks but it is a twinkle in the Tech department’s eye at the moment.
  • Dual Boot Android on a 8100T: Android doesn’t run on x86 natively, does it? In 30 mins of searching I couldn’t find anything that shows android running on x86 processors, but if it did it would require emulation, right?

They have told me “Come up with a list of computers you think would work and we will have our cybersecurity team (one dude) look at them.” I’ve found an Elo touchscreen for $530 that looks identical to the AIO that they are using. The setup they have negotiated is around $1125 per unit.

So far it looks like SimplyNUC Zircon is probably the best bet. Configured with 8 gb and W11p it saves $245 per unit and allows us to keep the hardy ELO touchscreen.

My questions

  1. Any other ideas for reputible vendors? I also looked at MSI / Asus/ Asrock since they have industrial department.
  2. Anyone else know if mini PCs from these are run in a PCI Compliant system?

If the questions are dumb, sorry, but multiplying $250 times each computer in our system is an eye watering number, even in my locations it is a non trivial amount of money
