Network becoming self aware - Please help

Have been having problems with my home network for quite some time. As it stands my wifi has it’s own consciousness and is working when it want to work, and sadly that is not often. A connection through cable works 10/10 times, but the wifi is either plain out not working, or extremely slow.
I am using the fiberbox/router (combo, can’t replace) and a UniFi ap long range as my, you guessed it, ap. It should be working as the UniFi is set up to let the fiberbox/router handle the dchp requests.

Things I have outruled as the problem:
Faulty cables, works fine if plugged directly into pc
Faulty ap, brand new, brought it because the old one gave the same problems
Interference from other nearby networks, there is no other networks nearby
Network card faulty, does not work on any phone, android as apple, tablet, laptop, apple tv

I have no clue whatsoever what is causing the problems, if someone has encountered the problem before, or have some ideas to what could be the problem, please respond.

Things to check

First thing is have you tested your house for wifi strength grab a hundred foot cat5 and move that ap around the house use a wifi app on your phone and check the signals. If your not getting wifi while that AP is in the room you need to reset and reconfig that unit. Make sure you have the information about the LED codes handy because that unit can get stuck in a number of modes. Knowing what the lights mean is really important with those units.
How long is your cable run?
Have you tested multiple channels?
Have you tested another AP in the same area?
Make sure the AP is in the center of the floor or in the actual room you need wifi especially if you home and interior walls are concrete.
What your home is made of has alot to do with signal strength and what is running in your home. I have done installs what required an AP every 15 ft in certain areas so it could just be your environment.

Signal strength is not the issue as staying right beside the ap does not help.
The ap have been set up multiple places using different wires and the issue persist.
Cable length should not be an issue as cabled to my pc gives me all of the bandwidth we are paying for.
All of the cabled is fully functional as am electrician has tested all of our cables

Kill it with a hammer. The next one will be afraid of you, ergo, will work fine.

I know you checked interference, but do you have a microwave frequently running. That messed up my wifi for so long until I moved it.

It sounds lazy. It needs to be taught a lesson so here's what you do. Get your other ap and take them both into the front yard make sure the ap you want to keep is in a good position to see and explain to it the error of its ways, then rig a scaffold or throw a rope over a tree if you have one (in good view for the other ap) and hang the lazy device until it stops shakeing. If it doesn't respond then seek other Tek advices

I switched back to engenius ecb series APs I still use the ubiquiti mini router but I have found the AP (saucers) problematic.

Really? I've been using them in my home and workplace for over a year with no issues at all. My old Netgear on the other hand....

I do not like how they respond to factory resetting half the time they get stuck in some limbo mode (firmware update mode?) Once they work they are great. I just do not have the time to deal with the factory reset issues I had with them. You can wipe the engenius ecb back to default in seconds. Could be user error they do make great products.
