Hmm ... Trying out something like puppet/ansible/salt might be an interesting project too as @perkelator mentions wanting to learn about networking/server administration from what I understand.
Maybe getting an app like RocketChat or even a whole Sandstorm setup deployed with the above technologies could be a nice challenge.
