So I making a new build and I was wondering which one to go with. I do 3D Modelling(ZBrush & Blender), Illustrator, and plan to start playing more PC games. And also I would like to know which build would be able to handle the LG 34UM95-P, which the resolution is 3440x1440.

LGA 2011 build, since having a monitor that large requires some serious gpu horsepower.
Although both would work fine, the 2011 would work better, and if you can afford it, why not :D that's a beastly system, and worlds better than the 1150 setup
I am going to point out that this will heavily come down to CUDA vs openCL for your 3D modelling stuff.
From my research, CUDA has way more support, but I know openCL is getting a lot of momentum as well.
I would probably go with what is going to cut your render time the most. Also.. I am a fan of a single graphics card over crossfire/SLI.

Both of my builds have quality parts. The difference between the 4930k and the 4970k isnt big enough to spend an additional $400 (CPU and motherboard) when you can put that toward more graphical power. If you want AMD I would put in a r9-290X over 280X crossfire..., but those of these would lose horribly to 780 sli, and a 780 ti is nothing to joke about either.
