Need help with a build

I have 2 questions in this post:

I need help with a build for the future or to at least future proof for a few years. I'm going to be dual booting this with Windows 7 for: gaming, recording videos, editing videos and photos, streaming possibly  and   Mac OS X for: work and media storage on iTunes. 

I wanna be able to 2-way SLI either the 780 or 780 ti 6 GB variants and I want it to be portable for I will be moving quite a bit. 

Questions:

1) I wanna know which would be better for something like this: 5770k or 5930k? (I know they are coming out later this year but I wanna just get a budget)

2) I also need help with a case. I wanna do ATX form factor for either CPU choice, have a 5.25" slot for a blu-ray optical drive, be able to watercool everything with at least space for a radiator or two.
