Need advice from Professional system admins

I'm thinking about applying for this position at a aluminum factory for an "IT Network Enthusiast"

now I don't have a bachelors degree, hopefully they won't touch too much on that topic

what are some things I'd need to know how to do and what you did frequently as a system admin?

I did take a few cisco classes in highschool but nothing too deep in networking
I know hardware in and out, its be the software portion

From the looks of it, it mostly deals with windows, which is good, linux isn't my friend

The Cisco stuff you'll want to learn, you can pick up a book and learn most of what you need to pass the interview in a few days.

In all honesty, most IT jobs don't really need that degree, it's more of a formality, as long as you prove you can do the job, you'll be fine.

I work for a school district, your mileage may very with how the company works.

are cisco switches/routers really all that different from regular ones?

They can be. It depends on the one's in service.
