Is that good enough to get 60fps + on any of the games he bench marked and will the fps be worse if i record instead of stream, i'm kinda new to this stuff

FPS always drops if you are recording, at least for me. I can normally get around 80-90fps on MW3 maxed out, but if I try to record with fraps, it drops pretty drastically. Although my computer is about 4 years old, so you should be fine.
Assuming you're going to be editing and rendering your videos i would go with a Nvidia GPU. The cuda cores improves editing and rendering and i think some more stuff i think; I'm don't have a lot of knowledge at that area but i know they improve editing and rendering. :P
So if you're deciding to go with a Nvidia GPU i would go with something like the Evga 670 ftw. You will save a lot of money since the 7970 you chose i very overpriced probably mainly because of the 6GB. And you don't need 6GB of memory 2GB is enough.
However if you're confident you want more than 2GB for some reason there are several 670s that have 4GB.
