I’ve got 2 I’m using:

MINISFORUM Mini Server UM560 XT AMD Ryzen 5 5600H Mini PC 32GB RAM 512GB PCIe SSD Mini Computer, 2.5G Intel NIC, 2 X HDMI & USB-C, 6 X USB Port,Small Form Factor

Running proxmox, 2-3 vms, 5-8 lxc, with decent headroom. Not sure about 4k/HDR though.

Beelink EQI12 Mini PC,Intel 12th Gen Core i3-1220P (10C/12T,up to 4.4GHz),Mini Computer with 24GB LPDDR5 RAM 500GB M.2 2280 PCle 4.0x4 SSD,4K Dual Screen Display/WiFi6/BT5.2/USB3.2/Dual Gigabit LAN

Running just 4 VMs: opnsense, adguard, unifi controller, and a fileflows transcoding node. This might be worth looking into, since it has Intel Quicksync and can transcode a couple 4k streams simultaneously no problem. I think there’s HDR support, but I don’t use it much myself.
