So I'm working in a school upgrading some computers etc. Some of the PCs have an Intel G45 Express chipset which is only supposed to be able to run 8GB of DDR3. Do I have to run 4 x 2GB modules or is it possible to run 2 x 4GB modules or even 1 x 8GB? Also I know this is highly unlikely but is it possible to go over 8GB max RAM on this chipset?

I would suggest you look at the motherboard's manual for such a thing since every motherboard differs when it come to memory configuration.
If you don't have the manual simply search the motherboard model and hopefully the manufacturer's website will still have a PDF of the manual.
EDIT: You could in theory load up the motherboard with 16GB each 4GB and have it post but due to the chipsets limitation of 8GB DRR3 windows will most likely report 16GB available with 8GB useable.
