we had some issue with bad things using the mac (not porn, but software and stupid people)
i have a pfsense router with website blocking, so that is there to us for it
the goal is to have a schedule wiper but google was not much help
I know you said mac, by why not just use a pc using Windows Kiosk mode? Do you have specific software that requires a mac?

You can use Guest mode on the Mac. These are the features it has
-No files, caches, or passwords are stored longterm – everything is deleted after the guest user has logged out
-Using the Guest account does not require a password
-Application usage and web access can be controlled through Parental Controls

Guest mode is where I would start.
If you end up needed to allow file saving, you're going to lose a lot of control, which isn't the worth thing.
If you're down that road, I would recommend creating a golden master backup, with carbon copy cloner. So that, one a week, or once a semester, you can roll back the computer to it's sterile freshness, without having to reconfigure everything.
Or if they want to save something make them save to a flash drive. Good things Macs can never get a virus /s
