Tutanota is a good service. Its very private but does lack some features at present. You can get a free account, but I pay $12 a year for premium.

Its based in Germany and provides regular updates on warrant and search requests (they turn over accounts when a proper warrant is supplied, but the address is useless since they're encrypted). They don't log IP addresses either.
