I'd like to use all the parts for my system strictly under $600 for the purpose of office work, basic video editing, and low-end gaming (Minecraft, etc.) Are these parts ok? Any suggestions?

What sort of video editing are you going to be doing? Because there are some AMD quad cores cheaper than the intel that will probably be better for editing.
Also get a smaller power supply, that's way over powered for your setup, unless you plan on putting some juicy graphics cards etc. in there later.
Actually if you pick up an ivybridge core i3 cpu and can utilize quicksync, it will smoke a similar priced AMD system for video editing.
If you plan on upgrading parts, get a better motherboard, maybe a z77 board?
You can probably play minecraft with the IvyBridge Intel HD Graphics 4000 GPU so forget about the GeForce 610 and start saving up money for a better GPU right off the bat.
Pricing for parts doesn't scale in a nice forumula so we can't just talk about pricing in y=mx+b but generally you wait to see if new tech is coming out or for big sale days like boxingday/blackfriday if they're applicable for you.

Will the i3 3225 run cool at 3.3 Ghz on a stock cpu heatsink and fan if i don't plan on overclocking?
