I was wondering if I should wait for the GTX 8xx Series cards to come out and get one of those rather than getting a GTX 770 ?
I am also planning to custome watercool my GPU in the future with a NZXT G10 and 2x120mm seperate rads.

There's certainly no harm in waiting for the 800 series. It is rumored the paper launch will be mid-September and they cards will actually be available in October.
Anyway general critiques of your build:
Personally, I think I would rather have a full ATX motherboard instead of a micro-ATX one. Perhaps the Asrock Z97 extreme3 would be a good choice.
I'm not sure if it's available in Canada, but get a Crucial MX100 SSD instead of the M500. The MX100 is faster and newer.
I would have loved to use a Full ATX mobo but then the problem is that I have limited space to put this beast but temps are not a problem currently
Oh. Whoops. I didn't notice that your case was micro-ATX. Forget my comment about the motherboard.
And also, the 120/128gb M500/MX100
The M500 costs $59.99 while the MX100 costs$20 more.
I am just not sure if all the extra cache would help by that much and is it worth the $20 ?
In real world performance, you won't notice a difference. Go with the cheaper M500.

Mostly gaming on the weekends. Payday2, Far Cry 3, GTA IV/V(when it comes out), Watchdogs(If i get the Gtx 770), World of Tanks, Arma 2 Day z mod, Day z standalone(Soon), Medal of Honor, War Thunder
I know my rig would be overkill for normal daily use but I do not want to compromise any performance whie gaming
And could anyone give me some tips on OC'ing my i5-4690k ?

i would go with a bigger ssd and a smaller hard drive, i'm currently running a 256gb ssd with a 500gb hard drive and that covers all my needs and is plenty of space for me, this just depends on what your storage needs are and how your going to be using the storage.
I will bring some 160 GB @7.2k + 250GB @5.4k + 320GB @7.2K. I actually live overseas as a Canadian citizen but i am going back to Canada for my studies. ^ That adds up to around 730GB worth of 2.5" hdds and if I add a SSD, I would not need a new 3.5" drive and i might just decide to throw in a m.2 for caching all them drives. I also have 2 320gb 3.5" old hdds sitting in canada
if i were you i would use faster 7.2k drives for storage and put aside the 5.4k drives for external use with a drive dock, and take an ssd and use it as a boot devise and put all your core programs on it like we browser, os, exc.
So the Drive config should be the following ?
Boot (M500 120GB SSD)
Storage 160 + 320(2.5") + 320 (3.5") all 7.2k rpm + maybe 250gb 5.4k rpm
so 120gb ssd + 900 GB of theoretical HDD space
btw should i throw in a 24gb m.2 for cache ?

If you have a SSD for the OS, you don't need a m.2 SSD for caching.
Is it worth it to go wait for the GTX 8XX series (Most likely GTX 870 and own another game which is not watchdogs) or should i make a compromise and get the GTX 770 and have watchdogs for free ?
Honestly, its completely up to you. Personally, I'd get the 770, unless you have the funds for the new card and a decent one to keep you going 'til it's released.
Go for it. I had the same problem. Remember there's a new card every year or so waiting doesn't pay off that much.
