I’m building a PC out of parts I have. AMD Ryzen 3600x, 16gb ram, gtx 1080, two 512gb Samsung nvme ssds, a Sata 2tb ssd. My plan so far is to put Debian, with KDE plasma on it. After that I don’t know what to use it for. I don’t own a TV so a htpc isn’t really an option. I have another computer running proxmox, that I use to learn Linux by breaking a lot of VMs. I’m open to suggestions. I’m considering donating it to a good cause or organization.
Turn it into a NAS for backups maybe? Mine has saved my ass a number of times when something died. It’s not got a huge amount of space, but I don’t know how much you need.

Could do a NAS with it, or could also turn it into another ProxMox machine and use that for a cluster setup. Though 16GB of RAM isn’t really much for virtualization so I’d up that if you were to go that direction.
I’d probably say NAS though if you don’t already have one, IMO ProxMox clusters are still even now kinda jank so I go with other hypervisors if I want something like that.
