HP EliteDesk 800 G3 SFF Storage Server ideas

Putting together a storage server with 2 10TB HDDs, 2 1TB Sata SSDs, and one Optane 118gb m2 stick, for Ram I’m at 32g, but can double it. Processor is a 7600 i5.
I’m new to Optane, and trying to figure out the best way to lay out my storage strategy. I have a Chelsio T520-CR NIC for networking as well as the MB 1gb for management.
The main purpose of this server will be a backup and image server for an IIOT homelab I am building out using RPIS, Thin Clients, and Mini PCs. I’ll be playing around with TimeScale, PostGres, and Influx DBs, so this may end up taking on the DB role if I run into any issues with the smaller hardware I’m working with.

The last of the bits and bobs for hardware and connectors are showing up over the next couple days, But I’d like to hit the ground running. My priorities are Redundancy and performance over capacity, and I’m open to any platform/strategy ideas. This is a homelab environment, so I would be happy to get weird with it. I’m new to Linux and played around with ProxMox a little bit, so I think that may be the base system I’ll be building on.
