You should be able to, as long as your OS can detect it and it can be physically connected.
Think of (PCIe) NVMe drives as a drive controller, rather than a drive itself. Some motherboards support booting from add-in raid controllers, some don't. They all (assuming the drivers are there, OS support) can see the device, regardless of boot support.
