So i have been on the fence to watercool my pc. But how often do you change the water?
I'm assuming you mean a custom loop and not a closed loop cooler like an H100i?
I myself don't have a custom loop but I have heard from people who do that they change it every six months to a year.

I change mine every three months.
Partially because it's easy to do and water is cheap.
Partially because I like to fully tear apart my system and clean everything that often.
Partially because I want no chance of anything growing in it.
Every six months is a good standard to have. You COULD get by on a year, but I personally wouldn't.
But if you are using distilled water arent there like a 0% chance of anything growing in it?
No, just less of a chance. You still need to use a kill coil or deadwater.
You can also have tiny pieces of left over metal from the inside of your radiator, or flux, or tons of other little things. Microbials, germs, that sort of thing.
It's also a very good idea to flush your system with vinegar-water before you put it in your PC, as well.

use isopropyl alcohol 90 percent or higher and let it soak for a couple of hours then use distilled water to rinse for first time use.
Then use vinegar for maintenance to clean the rad
Every 6 moths to 1yr is recommended but some people have done it longer.
Just make sure you have a kill coil, or pt nuke which is just copper sulfate diluted alot.
