I’m in a funny situation where I’m in a rental, and I want to move my hosted sites off a dedicated server that my provider keeps raising prices on and host it on-prem. I can’t get additional wired line because that’d require punching a new hole in the wall that my landlord doesn’t want.
A business-tier 100mbps 5G line is 36 Eur a month with a fixed IPv4, while my dedicated box with 200mbps in a DC and a static IP costs 62 Eur a month.
Monthly upload traffic is around 100GB, and everything is behind Cloudflare.
How terrible of an idea is this? 100GB upload is already enough for my home ISP to go up in arms about it, won’t allow ports 80 or 443 and refuse to upgrade my regular customer line to business one.

It’s done everyday the world over.
Not the fastest as most carriers throttle over an arbitrary amount of usage, so you’ll likely not be able to move 100GB a month anymore.

I have reviewed the terms for this exact issue, and their FUP limit is 1TB/month before they start throttling the line. I’d be basically going with the same provider as my current phone provider, so I already know I got proper 5G coverage & used them in the past. 30 day renewing contract as well if I just get a SIM card, so can cancel anytime I want as well.

If the signal quality is very good, it will probably work.
In the case of radio communication, there is always a question of greater delay and a greater chance of packet loss as well as frequent anomalies affecting the quality of communication/failures.
If you are doing it for yourself, then it is probably ok. If for clients, then to be honest, I would not be that client. 
I would rather look for another offer for a server/vps before I decide on such a solution.
If the 5G operator is ok, then it will probably work to some extent, although personally I would not lean towards this option.
