+1 On Ratzzz'es suggestion, if you ever end up with Zucchinis again, make a Zucchini salad, it's an Italian classic! I usually marinate mine with vast amounts of balsamic vinegar.
I personally don't like Zucchini, but my GF loves it and cooks it all the time.
A simple recipe that's actually quite tasty(spare the zucchini) is:
-Sliced hot dogs
-Boiled White rice
-Zucchini
-Champignon
-Salt and Pepper
-1/3 cup of cream
Pour it all in a frying pan and cook on medium heat for 10 mins.
Oh, i make similar risotto really often. Its simple to prepare... But i use meat, not hot dogs...
I usually cut zucchini up thin then put them in a bowl with Italian dressing and let that marinate for a few hours tastes pretty good.

Make sure and cut the onions, squash, and zucchini very thin if you want it more mushy. I could eat it for days.
My mom topped it with a few pieces of pepperoni, just for a hint of flavor. Not much.
Edit:
Don't dice the onions, slice them into rings, also, 1 squash really adds some depth.
