How much does the amount of cores affect your gaming performance?
And how much does the amount of cores affect your daily performance?
For example 2 core laptop with 128 GB SSD (1000GB HDD) vs 4 core latop (1000GB HDD)
Well, what core are we talking about. 4 AMD apu cores vs the Intel CPU cores?
And for day to day multi tasking the 4 cores would be better, provided we are comparing apples to apples and not apples to watermelons

Everything depens on what are you expecting from said machine and the price/performance ratio. If you're going for a powerful laptop with a good GPU inside I think a quad-core CPU comes right out of the box in it. But if you're going for a mid range device, a good all rounder I think you can choose. If you're not doing anything really intensive (gaming and other things) I think you should go for a dual-core since it will surely be cooler and make the laptop run for more on a single charge. If you're looking for a "desktop like" experience on a notebook a quad-core CPU is a no brainer.
Cores help in render time but even my Core 2 laptop does just fine. Could use a better GPU though....
For gaming get the quad core.

Assuming you want to play newer games as well you should grab a quad core.
What laptops are you comparing specifically? The graphics card will matter more, although if its just the integrated iGpu on the CPU itself it probably wouldn't matter whether you get the quad or the dual.
Ofc the GPU matters more. Still, a dual core would quickly hamstring his performance in almost every new game.
Well yeah but I'm just making a point that most cheaper laptops don't even have a graphics card and in that case the core count wouldn't really matter. The reason I say cheaper laptop is we're talking a quad core Intel laptop that doesn't even have a ssd, so I'm making a jump and saying that it's probably going to be on the cheaper end. Which is why I am curious about what laptop specifically, as again an iGpu isn't going to be hamstrung by a dual core. And then in this case the dual might make even more sense as the boot drive being on an SSD, even a slower cheap 128gb one, would drastically improve the experience.
