My girlfriend and I did play Pokemon Go for a while now, but i'm really tired of it.
There is not much to unlock anymore, it basically becomes the same thing over and over again.
So now I am looking for a new game 
She doesn't have a great pc, just an cheap laptop so preferably an android game.
I was looking for an co-op, or something a bit easy in multiplayer.
A laptop game should be okay, she likes Minecraft.
Do you guys have some recommendations?

I second Factorio. Get it on GOG, give gf a copy.
It looks dark and the graphics look like crap, but once you get into it, it's a TON of fun, especially when playing with a friend.
Actually.. Brothers was the first one we did play together and damn it was great.
Wouldn't recommend playing on controller tho, but the keyboard is great.

I wholeheartedly second 'Lovers in a Dangerous Spacetime' as @psycho_666 suggested, to be a nice game to play in co-op with your GF.
Other single player, low requirement games that she likes are:
ABZU: More art project than game. Beautiful graphics and music.
Iron Snout: This free Little Piggie vs Big Bad Wolves Street Fighter game has a 2 player SF volleyball mode.
Unravel: A cute platform game that has a bittersweet emotional story.
HunniePop: I can't explain why my GF likes this, either your GF will love it or she will break up with you.
