So, I'm planning to build $1850 build that Logan had suggested, but some of the parts I can't find in the UK or I'm told its incompatible. Below is a link to the current build design, can anyone suggest if I should change anything or if i'm missing anything.

Very nice, I can only suggest to maybe get a Samsung 840 Pro as they're top of the market, or a OCZ Vector as they're right up there too.
You might want to take a look at the Asus P8Z77 LK its nice
Consider not spending $100 on RAM
And finally, the H220 from Swiftech is just around the corner, if you plan on doing a custom loop, or want something in between, you should look at that. Though it might not proform as well as the X60 in closed loop, if you add anouther rad, im sure it will do better. You really should take advantage of that mega case!
To be honest, i'm not at all familar with building custom computers and all of this is relatively new to me.

Really aiming to build an epic gaming PC that will last me atleast 2/3 years and can go upto £1500 if i build it now, or £2500 if i wait until may-ish
£1500 will get you a beast!
Do you need monitor and peripherals?
have a preference on air cooling or water-cooling?
have some pretty old/basic keyboard/mouse and monitor lying around
but may upgrade later on once I get it up and running
not too sure about air or water cooling, whatevers best, however, would like water cooling that doesnt need any maintenance
