First build! looking for advice

Hey guys! I'll be building a Gaming/editing PC (Mainly for gaming) in the next month for the first time ever. I'd appreciate anyones advice. So here are the parts!

CPU: Intel 3770k (Will OC)

MOBO: ASUS Sabertooth z77

RAM: 16gb of Corsair Vengeance ram (not sure if i should get 1600mhz or 1866mhz.. Would there be a huge difference in performance?)

GPU: I can't decide if I want a 670 or a 680.. Sure the 680 is obviously better, but i heard you can pretty much match a 680's performance with a 670 from just a simple OC? Any opinoins? Also I may put either cards in SLI eventually when I have more funds. (And by the way i play games like BF3, Crysis 3, Arma 3. so ill need a GPU for demanding games like this.)

CPU Cooler: Corsair H100i

HDD: Seagate Barracude 2TB 7200 RPM

SSD: OCZ Vertex 3 120gb SSD (Bootdrive)

PSU: Corsair AX 850w ATX Fully Modular 80+ Gold (And is this beefy enough to handle all of this plus SLI 670's or 680's?)

Case: Corsair Obsidian 650D

OS: Can't decide if I should go for Window's 7 or 8. Any advice?

I'm pretty much in the same position and decided to go with the 670 since the 680 costs here in Germany about 100-120€ more, but only brings a couple of frames more. Logan even compared the both if I remember right. And yo should get an SSD

Gtx 670 (will match/ beat a 680s "stock" performance when overclocked)

850w psu is fine for any x2 sli

Id go windows 8 and use some software to bring back the start menu (Watch logans review of start8 (edit: linked wrong video lol))
