Look at the H100i, as it'd be easier to mount. 850W would be fine with a single 680, but I'm not completely sure about a second one. Those parts look good to me though.
i dont know exactly what your needs are but to me that motherboard looks like overkill. Maybe look at something like the asrock z77 extreme 4. it has all the featureds u need, is passable for overclocking and is reliable. Let me know.
Everything looks okay to me, although the Sabertooth is a little on the expensive side, but it is also a very nice motherboard.
The Sabertooth is way overkill unless you plan on extreme overclocking, and the same goes for the H100. The 850W is also more than enough for a 680, even when you overclock both it and the CPU. The minimum I'd get if I'm OC'ing is 650W.
A suggestion. Getting a cheaper case( something like this ) will help you get a GTX 680 4GB variant, so look into that.
Also, is this for editing or gaming? Because if it for editing, dropping the H100 will let you be able to get an i7 3770K. Getting this over the i5 will help a lot more in editing than even a severely overclocked i5.

How very astute about the case and the GTX 680. Also about the power supply. I would have recommended similar things, but people tend to get peevish when you say that all their choices are wrong. But I do happen to agree with you, and would likely recommend going this route:

That cooler is really huge, but it should fit into that case. And the GPU really doesn't match the color scheme, but given that the case doesn't have a side panel window, that doesn't necessarily matter. Also, they should just give the cooler shroud a respray if they feel it is an issue in the future, it is much better than trying to find a blue one, or going with a black EVGA one. Those overheat.
Agreed- but I am a little iffy about that case. Maybe something else? Like a Haf 912 or Zalman Z11 or Corsair 200R
