Finalizing PC build advice

Hi guys and gals, so pay day is getting closer and the more I think about the planned builds the more research I do on parts the more I seem to be over thinking the final build.

So heres the deal I have a 2k ish budget I need to recycle older builds for the 2 children though I can hold of on one of the kids pcs till later. 

Parts I need to pick up a single 22inch monitor for $130 to $160 and 2 3tb hard drives, here are the specs on the older machines:

Wife's                                           

Intel i5 2540p, Gigabyte something, 16 GB B. Ram 1333mhz, GTX 560 ti and 850 watt psu

Mine

AMD FX 6100, Gigabyte 970 ud3, 16 GB B. Ram 1333mhz,GTX 460 used to be sli but one card died and 1050 watt PSU

Now what I looking at going with is either:

FX 8350, Sabertooth R2.0 and a Corsair h100i cooler for over clocking

Or 

i5 Ivy bridge with the clock of 3.4 with some atx board not sure which yet and either getting the GTX 760 or a 7950 which they will be sli/crossfired at a later date.

Now the new builds will be used for playing games like FC3 FFXIV CoD etc, video editing watching videos and photoshop work

i would go AMD but get a GPU upgrade

 I have a feeling you didn't read or misread the post but 760 and 7950 my price range

The AMD option with the 7950s seems to be the better, higher performing option. I'd be going for that.

The stock clock for the 8350 is 4.0GHz and with that cooler, you'd be sure to be getting upwards of 4.7GHz with overclocking.
