I think I can try a couple things but in the meantime you could suggest some ideas.

I think it is Windows fault, Note Windows isn't stock it has some add ons that is why I think it isn't regognized by Linux
I'm not so sure if its actually windows fault, I've had issues with elementary and some uefi's in the past.
I think you are right after messing arround with somethings....
Had an issue when installing grub with Ubuntu on an older store bought system. The installation goes fine until I get to the grub installation and freezes:
ubuntu gnome grub-installer: info: Installing grub on /dev/sda
ubuntu gnome grub-installer: info: grub-install does not support --no-floppy
ubuntu gnome grub-installer: info: running chroot /target grub-install --force
ubuntu gnome grub-installer: installing for X86_64-efi platform
Then it freezes, I'm unable to move the mouse or open the terminal. With stock Ubuntu it freezes at hardware configuration. Thinking it was a windows configuration issue I tried installing windows 10, which was previously installed, but haven't had success. Freezes when copying files.
go into a command windows and cd to where grub install is. and run grub-install --force --boot-directory /target/boot /dev/sda
the grub install is usally in /usr/lib/local/ if i remember right.
I just had to deal with this issue. It was because my UEFI or whatever was called was on.
I had to turn it off in bios and then re-install linux.
It should work after that.
Elementary OS does not want to install grub by default.
It uses its own special boot.....manager......thing? IDK. Elementary OS is weird.
I have found that in a lot of cases, the pantheon desktop actually flat out works better on arch linux. So give that some thought.
