I'm thinking about buying 2 21:9 monitors and stacking them. Everyone I've asked is calling me crazy and saying it's pointless. I thought it'd be awesome because I could have 4 1080p windows opened at the same time. It's essentially 4 1080p monitors (which I've seen done before) in 2.
Nothing particularly wrong with it. If you are going for productivity I would say it is downright sensible.
I use stacked monitors currently and the only change I have had to make to how I do things is moving the taskbar from bottom to left so I can get at it easily and not trigger it while moving the mouse to the bottom screen. I keep the task bar hidded until mouse over.
Personally I wouldn't go for dual 21:9's because you'll end up with a 21:18, plus a bit on the vertical side of that ratio which could essentially make it almost square. And I prefer wider monitor layouts to taller, or closer to square ones. I don't get the idea even a single 21:9 would satisfy this. Hence why my ideal setup would be triple 16:9 panels. That being said I don't get the idea that anything wider than 16:9 would be nice on a single flat panel, because I'd imagine you'd get a bit of distortion (as you go to the end of the monitors everything's going to get smaller).
It's all subjective though, if that's what you think will suit you, party on Wayne.
